Ingredients

10 Ounce(oz)  beef tenderloin, cut into slivers
8   egg noodles
2 Tablespoon(T)  vegetable or peanut oil
1   onion, finely sliced
1   green bell pepper, finely sliced
1 Cup(c)  bean sprouts
1 Teaspoon(t)  salt
1 Pinch(pn)  sugar
2 Teaspoon(t)  chinese rice wine
2 Tablespoon(T)  light soy saucee
1 Tablespoon(T)  dark soy sauce
1 Tablespoon(T)  scallion, finely shredded
1 Pinch(pn)  white pepper
1 Dash(ds)  sesame oil

Preparation

Combine all the marinade ingredients in a bowl and marinate the beef for at least 20 minutes. Cook the noodles in a pan of boiling water for 4 to 5 minutes, or according to the directions on the package. When cooked, rinse under cold water and set aside. In a preheated wok or deep pan, heat the oil and stir fry the beef for about 1 minute, or until it has changed color. Stir in the onion and cook for 1 minute, then add the bell pepper and bean sprouts. Cook until any water from the vegetables has evaporated. Add the salt, sugar, rice wine, and soy sauces. Stir in the noodles and toss for 1 minute. Finally, stir in the scallion and serve.
