This dish is superb when served with rice or groats and cauliflower.

1 1/2 Pound(lb)  flank steak
6 Slice(sli)  strips bacon
3   dill pickles, peeled, cut out lengthwise into sticks
1 Dash(ds)  salt and pepper (to taste)
2 1/2 Tablespoon(T)  flour
1 1/2 Tablespoon(T)  bacon drippings
1/2 Cup(c)  water
1/2 Cup(c)  sour cream


Cut each flank steak into 3 strips widthwise. Pound well. Arrange the bacon and the pickles on each piece. Roll and fasten with toothpicks. Sprinkle with salt, pepper, and flour.

Brown in the hot drippings. Transfer to a baking dish, add 1/2 cup water and cover. Bake in a moderate 350 F. oven for 1 1/2 hours.

Remove to a warmed platter. Add the leftover flour to the gravy, bring to a boil.

Remove from the heat and add sour cream. Pour over the meat. Serve with rice or groats and cauliflower.
