Recipe Description
If you already have leftover beef round steaks on hand, this is an easy recipe to put together. The red pepper adds just enough spice to jazz up the meal.

1/4 Cup(c)  green onions, sliced
3/4 Pound(lb)  beef round tip steaks, cooked
2 Tablespoon(T)  cornstarch
4 Ounce(oz)  uncooked angel hair pasta, broken up
1/2 Teaspoon(t)  red pepper, crushed
2 Tablespoon(T)  red wine vinegar
2 Tablespoon(T)  low sodium soy sauce, divided
1 Cup(c)  carrots, julienned
1 Cup(c)  mushrooms, chopped
1 1/2 Cup(c)  water
14 Ounce(oz)  low sodium beef or vegetable broth


In 3 quart saucepan combine broth, water, mushrooms, carrots, 1 tablespoon soy sauce, vinegar and red pepper. Bring to a boil. Reduce heat and simmer, uncovered, 5 minutes. Add pasta and continue simmering 5 additional minutes. Stir in cornstarch and bring to a boil. Cook and stir 1 minute. Stir beef into soup. Immediately remove from heat. Cover and let stand 5 minutes. Stir in remaining 1 tablespoon soy sauce and green onions. Serve immediately.
