Recipe Description
Any leftover rice or rice pilaf will work well in this super easy recipe. Or, you could cook 3/4 cup of instant rice and use it immediately.

1/2 Pound(lb)  80% lean ground beef
1   onion, chopped
4 Clove(clv)  garlic, minced
2 Tablespoon(T)  vegetable oil
2 Cup(c)  prepared vegetable rice
2 Tablespoon(T)  soy sauce
4   eggs, beaten


In large saucepan or wok, combine ground beef with onion and garlic. Cook and stir over medium heat, stirring frequently, until beef is almost cooked. Remove from heat and drain thoroughly. Wipe out saucepan or wok. Return wok to heat and add oil. Heat over medium high heat until oil ripples. Then add rice. Stir fry for 1 minute. Sprinkle with soy sauce and stir fry for 2 to 3 minutes longer. Return ground beef mixture to saucepan. Then push food to the sides of the saucepan and pour eggs into the center. Cook eggs, stirring frequently, until set. Mix with rest of food in saucepan. Stir fry for 1 to 3 minutes until hot, then serve immediately.

Additional notes

Tip: Fried rice is best when it has been cooked and thoroughly chilled. The grains will cook separately and heat thoroughly. You can use any leftover cooked meat or vegetable in a fried rice recipe. Just make sure to add the cooked ingredients at the end of the stir fry process because they only need to be heated through.
