Recipe Description
Beestings is the name of the very rich milk which a cow produces immediately after a calf is born. In some parts of the country it is never used for human consumption, but in others it is highly prized and shared with neighbors. It is made into pancakes and beestings curds. The third milking was considered to be best for these recipes.

6 Slice(sli)  flour
1 Teaspoon(t)  baking soda
1 Pinch(pn)  salt
1 Tablespoon(T)  sugar
6 Tablespoon(T)  beestings butter


Sieve the flour, baking soda and salt into a bowl. Whisk in enough beestings to make a thin or slightly thicker batter, depending on whether you want thin or thick pancakes. Drop tablespoonfuls on to a hot greased griddle and cook for about 5 minutes on each side. Serve hot with butter for tea.
