Recipe Description
Here's a powerful combination of shredded cooked beets and horseradish.  A little bit goes a long way.  It's a must for spreading on canapes or cold sliced meats, and is almost always present at holiday festivities.  You'll find it not only in Germany, but also in Poland and other border countries.

Ingredients

1/8 Teaspoon(t)  black pepper, freshly ground
1/4 Teaspoon(t)  sugar
3 Tablespoon(T)  lemon juice
2/3 Cup(c)  prepared horseradish
2/3 Cup(c)  cooked beets, freshly grated

Preparation

Combine beets, horseradish, lemon juice, sugar and pepper in a small bowl.  Add salt to taste.  Cover and refrigerate overnight.  Serve chilled over cold pork, veal, beef, sausage or sandwiches.
