Recipe Description
This is an especially pretty salad with the contrasting colors of red beets, orange slices and mint. To make it more substantial, serve it with some goat cheese or crumbled gorgonzola.

4   roasted beets, peeled
2   navel oranges, peeled and sliced
2 Tablespoon(T)  extra virgin olive oil
1 Teaspoon(t)  fresh lemon juice
1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  fresh mint, chopped
1 Pinch(pn)  black pepper, freshly ground, to taste


Cut the beets into 1/4 inch slices. Alternate the beet and orange slices on a platter. Whisk the oil and lemon juice with salt and pepper to taste. Pour the dressing over the beets and oranges. Scatter the mint on top. Serve immediately.
