Beet salads can often be stored for several days without loss of flavor or texture. This one can be kept in a glass container in the refrigerator for up to a week.

2   oranges
1 Pound(lb)  fresh beets, cooked and sliced
1/3 Cup(c)  red onions, thinly sliced into 1 inch pieces
2 Tablespoon(T)  orange juice
1 Tablespoon(T)  honey
2 Tablespoon(T)  apple cider vinegar
1/4 Teaspoon(t)  kosher salt
1/8 Teaspoon(t)  pepper, freshly ground


Cut the oranges in half. Cut out the segments as you would a grapefruit. Combine these with the beets and onions. Squeeze the orange halves to extract the 2 tablespoons of juice needed for the recipe. Strain out the seeds and put the juice into a bowl. Whisk the juice with the honey, vinegar, salt and pepper. Pour the dressing over the beet mixture. Stir to combine.
