This recipe comes from my mother, who was born in Berlin, Germany. She said this was passed down to her from her mother as a traditional German recipe.

Ingredients

Serves To:USMetric
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  lemon juice
3/4 Teaspoon(t)  sugar
1 Teaspoon(t)  vegetable oil
1 Tablespoon(T)  parsley, chopped
1   large cucumber, pared and sliced very thin

Preparation

Place sliced cucumber in a bowl. Sprinkle with salt. Push slices together as much as possible. Weigh down and press. Let stand 4 hours minimum. Pour off cucumber juice and add lemon juice, sugar and oil. Mix well. Add parsley and refrigerate overnight.
