Recipe Description
Apple pieces and raisins give this cake a delightful, moist texture.  A simple dusting of powdered sugar works well for a topping, but if you prefer to frost it, cream cheese or standard white icing also goes well.

2 Tablespoon(T)  powdered sugar
1 Cup(c)  raisins
5   large apples, peeled and cut into bite sized pieces (5 to 6 cups)
1 Teaspoon(t)  nutmeg, ground
1/8 Teaspoon(t)  cloves, ground
1 Tablespoon(T)  cinnamon, ground
1 Teaspoon(t)  baking soda
2 Cup(c)  unbleached or all purpose flour
4   egg whites, slightly beaten
3/4 Cup(c)  canol a oil
1 3/4 Cup(c)  sugar


Preheat the oven to 350°F.  Lightly spray a 13 by 9 inch baking pan with vegetable spray.  In a large bowl, combine the sugar and oil.  Stir in the egg whites.  Add the flour, baking soda, cinnamon, cloves and nutmeg.  Mix well.  Fold in the apples and raisins.  Spoon into the prepared pan.  The batter will be thick.  Bake for 50 to 55 minutes or until a wooden pick comes out clean.  Sift the powdered sugar over the cake while still warm.  Cool before frosting.
