If loving chocolate was a crime most of us would be on death row. These fudgy wudgy brownies are a chocoholic's dream. Got a yen? In no time you've got your fix. Don't over mix the batter or the brownies will be heavy, and under bake them a tad.

1/4 Cup(c)  confectioners' sugar, for dusting (optional)
1 Cup(c)  semisweet chocolate chips
1/2 Cup(c)  all purpose flour
1 Pinch(pn)  salt
1 Teaspoon(t)  pure vanilla extract
2   large eggs
1 Cup(c)  sugar
8 Tablespoon(T)  unsalted butter
1   unflavored vegetable cooking spray, for greasing the pan
2 Ounce(oz)  unsweetened chocolate


Preheat the oven to 350°F. Spray an 8 inch square cake pan. Combine the chocolate and butter in a double boiler set over simmering water, and heat until melted. Set aside to cool for 5 minutes. Transfer the chocolate mixture to a medium sized bowl and stir in the sugar. Add the eggs, one at a time, and beat until smooth. Beat in the vanilla and salt. Gradually fold in the flour. Do not over mix. Fold in the chocolate chips, and transfer the mixture to the prepared cake pan. Bake on the center oven rack until the brownies are barely set in the middle and a cake tester comes out with moist crumbs attached, about 20 to 25 minutes. With brownies, under baking is better than over baking. Let the brownies cool completely in the pan set on a wire rack. Then dust with confectioners' sugar, if you like and cut into squares.
