Recipe Description
Stuffed hard-cooked eggs are popular Spanish tapas. Double or triple this recipe depending on the size of your party. Refrigerate until ready to serve.

Ingredients

1 Dash(ds)  paprika
1 Dash(ds)  pepper
1 Dash(ds)  salt
20   whole capers for garnish
1 Dash(ds)  paprilka for garnish
1/2 Teaspoon(t)  anchovy paste
1 Tablespoon(T)  coarsely chopped capers, rinsed and drained
1 Tablespoon(T)  dijon mustard
4   hard-cooked eggs
1 Tablespoon(T)  mayonnaise

Preparation

Cut cooked eggs in half.

Carefully remove yolks and place in a small bowl.

Mash yolks with a fork and combine with mayonnaise, anchovy, mustard, capers, salt and pepper.

Divide filling among cooked egg white halves.

Sprinkle with paprika and garnish with several whole capers.
