Recipe Description
These are super easy, and you'd never know they are gluten free. Kids love them, adults love them, and they'll make you think going without gluten is a piece of cake.

Ingredients

1   large egg
1 Cup(c)  gluten free chocolate chips
1 Tablespoon(T)  vanilla
1 Cup(c)  light brown sugar
1/2 Cup(c)  unsalted butter
1 Teaspoon(t)  salt
1 Teaspoon(t)  baking soda
1 1/2 Cup(c)  light buckwheat flour

Preparation

Melt the butter and mix with the sugar. Add the egg, vanilla and stir. Mix in the flour and stir until a dough forms. Fold in chocolate chips. Bake at 350 degrees F for 10 minutes, or until cookies are crisp on the edges. Cool on a wire rack before serving.
