1 Cup(c)  raisins
1 Cup(c)  apples, finely chopped
1/4 Cup(c)  apple juice or water
2   egg whites, slightly beaten
1 1/3 Cup(c)  brown sugar, firmly packed
1/2 Cup(c)  margarine, at room temperature
1/2 Teaspoon(t)  nutmeg, ground
1/2 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  cloves, ground
1 Teaspoon(t)  baking soda
2 Cup(c)  unbleached or all purpose flour


Preheat the oven to 350°F. Lightly spray a cookie sheet with vegetable spray. In a medium bowl, mix the flour, baking soda, cloves, cinnamon and nutmeg. In a large mixing bowl, beat the margarine and sugar until light and fluffy. Add the egg whites, then juice or water, stirring to mix well. Gradually add the dry ingredients. Fold in the apples and raisins. Drop by teaspoonfuls onto the prepared cookie sheet. Bake for 12 to 15 minutes. Cool on wire racks.
