4   egg whites
1/4 Cup(c)  granulated sugar
2 Tablespoon(T)  amaretto liqueur
1 Cup(c)  amaretti biscuits
1/2 Cup(c)  maraschino cherries, drained and coarsely chopped
1/2 Cup(c)  unblanched almonds, toasted and chopped
1/2 Teaspoon(t)  almond extract


In a large bowl, using an electric mixer, beat egg whites on high speed until soft peaks form. Gradually beat in sugar, 1 tablespoonful at a time, until stiff peaks form. Fold in liqueur. In a small bowl, using your hands, crush amaretti biscuits to make 1/2 cup coarse crumbs. Fold half the crumbs, cherries, almonds and almond extract into egg white mixture. Spoon into 8 large pretty muffin papers or dainty serving cups. Sprinkle with the remaining crumbs. Cover with plastic wrap and freeze for at least 4 hours.
