This colorful and nutritious salad has a little bit of everything in it. This is great to share at potlucks or picnics, as it goes together quickly and transports well.

1 1/2 Cup(c)  black beans, cooked
1 Carton(ct)  tomatoes, chopped
3/4 Cup(c)  avocado, chopped
1/4 Cup(c)  scallions (green and white parts), sliced
1 Tablespoon(T)  fresh cilantro, chopped
1 Tablespoon(T)  vegetable oil
1 Tablespoon(T)  fresh lime juice
2 Teaspoon(t)  red wine vinegar
1/8 Teaspoon(t)  cumin, ground
1/2 Clove(clv)  garlic


In a large bowl, stir together the beans, tomatoes, avocado, scallions and cilantro. Add the remaining ingredients and toss to combine.
