Recipe Description
These delicious black bean cakes are a great addition to brunch menus as they pair well with scrambled eggs, or scrambled tofu. Added to a Mexican themed meal, they bring something fun and fresh to the table.

Ingredients

2 Cup(c)  cooked black beans
3 Tablespoon(T)  mild salsa
2 Tablespoon(T)  breadcrumbs
1 Tablespoon(T)  canola oil

Preparation

Drain and rinse black beans. Mash beans with a potato masher or fork. Combine mashed beans with salsa and breadcrumbs. Form mixture into small cakes. In a medium skillet, heat oil over medium high heat. Cook cakes on each side, approximately 2 to 3 minutes per side.
