Recipe Description
Dried beans are extremely affordable, where canned beans are extremely convenient. Use whichever you prefer to create this recipe and adjust the preparation time as needed.

1 Cup(c)  black beans, dried
4 Cup(c)  water
1 Tablespoon(T)  olive oil


Soak dried beans in water for 6 to 8 hours, or overnight before cooking. Drain soaking water from beans and rinse. In a medium saucepan combine beans with water, and bring to a simmer with the lid tilted. Cook 1 to 1 1/2 hours, or until tender. Drain and rinse cooked beans (or drain and rinse canned beans, if using). In a medium saucepan or saute pan, heat olive oil over medium heat. Add beans and heat through for 1 to 2 minutes, or until desired temperature is reached. Remove from heat and mash beans with a potato masher or fork.
