Cornbread with a surprise sweet brust of blueberries, makes a delicious snack for the kids, or as an addition to a brunch buffet.

2 Cup(c)  blueberries
3/4 Cup(c)  milk
1 Teaspoon(t)  vanilla extract
1   egg
2   egg whites
3/4 Cup(c)  sugar
1/2 Cup(c)  shortening
1/2 Teaspoon(t)  salt
2 Teaspoon(t)  baking powder
3/4 Cup(c)  yellow cornmeal
1 1/2 Cup(c)  all purpose flour


Preheat the oven to 350° F. Grease and flour a 9 by 5 by 3 inch loaf pan. In a large bowl, or on a piece of waxed paper, stir together the flour, cornmeal, baking powder and salt. Set aside. In a large bowl, cream the shortening. Add the sugar and cream until fluffy. Beat in the egg whites, egg and vanilla. Beat in the dry ingredients alternately with the milk. Stir in the blueberries. Spread into prepared pan. Bake 1 hour, or until a wooden pick inserted in the center comes out clean. Turn onto rack to cool.
