Blueberry Pie Extraordinaire

2/3 Cup(c)  sugar
1 1/2 Pound(lb)  blueberries
2   9 inch pie crusts, rolled
1 Teaspoon(t)  lemon juice
2 Tablespoon(T)  orange juice
1 Teaspoon(t)  grated nutmeg
1 Teaspoon(t)  grated orange zest
3 Tablespoon(T)  plain flour


Preheat a 375 degree F/190 degree C/Gas 5 oven.Roll out half of the pastry and use to line a 9 in pie tin that is about 2 in  deep. Combine the blueberries, the sugar, the flour, orange zest and nutmeg in a bowl. Toss the mixture gently to coat the fruit evenly with the dty ingredients.

Pour the blueberry mixture into the pastry case and spread it evenly.Sprinkle over the citrus juices.

Roll out the remaining pastry and cover the pie. Cut out small decorative shapes or cut 2-3 slits for steam vents. Finish the edge.

Brush the top lightly with water and sprinkle evenly with the remaining caster sugar.

Bake for about 45 minutes or until the pastry is golden brown.

Serve warm or at room temperature.
