Recipe Description
Cranberry sauce is used of basting turkey tenderloins, lending subtle sweetness to the flavor of the grill. Throw some orange slices on the grill for a colorful accompaniment.

Ingredients

8   grilled orange slices, to garnish
1 Tablespoon(T)  pepper, coarsely ground
1 1/2 Teaspoon(t)  salt
4 Pound(lb)  turkey tenderloins
2 Tablespoon(T)  orange rind, grated
2/3 Cup(c)  bourbon
1/3 Cup(c)  brown sugar, firmly packed
16 Ounce(oz)  whole berry cranberry sauce

Preparation

Bring first 4 ingredients to a boil in a saucepan over medium high heat. Reduce heat to medium low, and simmer 10 minutes, or until mixture thickens slightly. Remove from heat, and let stand 30 minutes or to room temperature. Remove 1/2 cup cranberry mixture. Reserve remaining mixture. Rinse tenderloins, and pat dry with paper towels. Brush with 1/4 cup cranberry mixture, and let stand at room temperature 30 minutes. Sprinkle with salt and pepper. Grill over medium high heat (350° F to 400° F) for 10 to 12 minutes on each side, or until a meat thermometer inserted in thickest portion registers 165° F, basting occasionally with 1/4 cup cranberry mixture. Remove from heat, and let stand 15 minutes before slicing. Serve with reserved cranberry mixture. Garnish, if desired.
