Recipe Description
These traditional Irish pancakes can be eaten straight from the pan with butter, crispy slices of bacon or pure Irish honey. Or, try serving them with super fine granulated sugar or corn syrup for a sweeter taste.

4 Tablespoon(T)  butter, for frying
1 Pinch(pn)  salt, to taste
1 1/2 Cup(c)  buttermilk
1/2 Tablespoon(T)  baking soda
2 Cup(c)  white flour
8 Ounce(oz)  peeled raw potatoes
8 Ounce(oz)  freshly cooked potatoes


Peel the cooked potatoes while they are still hot. Drop them into a bowl and mash immediately. Grate the raw potatoes, add to the mash with the flour and sieved baking soda. Mix well and add enough buttermilk to make a stiff batter. Heat a griddle or frying pan, grease with butter and drop in tablespoons on to the pan. Make large or small pancakes using anything from 1 to 4 tablespoons of mixture, and cooking for about 5 minutes on each side.
