Recipe Description
This recipe makes a beautiful presentation, made easy by using pre-packaged puff pastry. The French name for this is Brie en Croute, and it should ideally be served with either fruit or crackers. If you don't buy your Brie in a container, just use the cheese round as a guide.

4 Pound(lb)  small wheels brie cheese
17 1/4 Ounce(oz)  frozen puff pastry, thawed
1   egg yolk
1 Tablespoon(T)  cold water
1 Dash(ds)  salt


Using the empty Brie container, cut 4 circles out of puff pastry and place a circle on top and bottom of each cheese round. Cut 1 inch strips of remaining pastry and use to encircle cheese sides. Crimp edges together. Beat egg yolk, water and salt together and brush over top and sides of pastry shell. Be creative! Cut pastry strips and make a lattice on top of rounds, or cut decorative shapes like leaves and grapes, placing them artfully on top. Brush again with yolk mixture. Chill until ready to bake. Heat oven to 450 degrees F and bake for 10 minutes. Reduce heat to 350 degrees F and continue baking for 20 minutes. Crust should be puffed, light and brown.
