Serves Tool

Serves To:USMetric
2 Teaspoon(t)  olive oil
4 Clove(clv)  garlic, minced
1/2 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground
4 Slice(sli)  plum tomatoes
1/4 Cup(c)  fresh basil, coarsely chopped
3 Cup(c)  broccoli florets, blanched or steamed until tender
2 Tablespoon(T)  parmesan cheese, grated
1 Tablespoon(T)  reduced fat mozzarella, shredded
1   prepared pizza dough, or 1 large pizza shell

Put the oven rack on the lowest rung in the oven and preheat the oven to 450° F. If necessary, coat the pizza pan or baking sheet with nonstick spray. Heat the oil in a small nonstick pan. Cook the garlic over medium low heat until it begins to turn golden. Roll or stretch the dough into a 12 inch pie, or shape it to fit your pan. Place the dough on the baking sheet. Spread the garlic on the dough. Use a rubber spatula to scrape all the oil out of the pan and onto the pizza. Dust with the salt and pepper. Arrange the tomato slices in one layer on the dough (concentric circles make an attractive design), then place the basil and broccoli on top and distribute the cheeses over the pizza. Bake for 12 to 15 minutes, until the crust begins to brown and the cheese bubbles.
