Broccoli is good source of vitamin K, which is an important nutrient for bone health. In this light and fluffy souffle, it is a healthy and colorful addition.

Ingredients

1/2 Pound(lb)  broccoli florets
1 Tablespoon(T)  butter, for greasing
3 Tablespoon(T)  butter
3 Tablespoon(T)  all purpose flour
1 Cup(c)  whole milk
3   eggs, separated
1 1/4 Cup(c)  gruyere cheese, grated
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste

Preparation

Preheat the oven to 350 degrees F. Grease 6 ramekin dishes and place on a baking tray. Steam the broccoli over a pan of boiling water for 8 minutes until tender. Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Gradually stir in the milk and bring to a boil. Cook, stirring continuously, until the mixture has thickened. Pour the sauce into a food processor, add the broccoli, and puree until the mixture is smooth. Transfer the mixture to a bowl, allow to cool slightly, then stir in the egg yolks and Gruyere cheese. Season to taste. In a clean bowl, whisk the egg whites until stiff, then lightly fold into the sauce mixture. Spoon into the ramekin dishes, transfer to the oven, and cook for 20 to 25 minutes, or until the souffles are just firm to the touch. Serve immediately.
