Recipe Description
This rice dish is excellent upon preparation, but it also keeps well in the freezer.  Freeze small portions to add to other dishes.

Ingredients

1 Cup(c)  uncooked long grain brown rice
2 Cup(c)  water or broth
2 Teaspoon(t)  canola oil
2 Tablespoon(T)  onion, finely chopped

Preparation

In a medium size saucepan over low heat, cook the onion in oil until tender.  Add the rice, stirring until heated.  Add the water.  Cover and bring to a boll.  Reduce the heat to low and simmer for about 1 hour, or until all liquid is absorbed and rice is tender.  Fluff with a fork before serving.
