Recipe Description
This hearty beef soup, once extremely fashionable, has all but disappeared. For many years, a particularly unappetizing version was continually served by British Railways in their dining cars, which may explain its present demise. Throughout my childhood, I assumed that it was the only soup that could be served on a train, and having tasted it once I knew better than to risk the experience ever again. However, homemade Brown Windsor Soup is altogether different, tasty, nourishing and a meal in itself.

2 Ounce(oz)  butter
1 Pound(lb)  stewing beef, cut into cubes
3   medium onions, finely chopped
3   carrots, thinly diced
4 Tablespoon(T)  flour
10 Cup(c)  meat stock
1/2 Teaspoon(t)  thyme
1/2 Teaspoon(t)  tarragon
1   bay leaf
1 Cup(c)  madeira
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  black pepper, freshly ground, to taste


Melt the butter in a large, heavy saucepan. Add the meat and vegetables and saute until lightly browned. Sprinkle on the flour and cook briefly until it has browned. Gradually pour in the stock, stirring constantly. Add the herbs and bay leaf, bring to a boil, cover and simmer for 2 hours. Season to taste with salt and pepper. Put the soup through a blender or food processor. Reheat, add the Madeira and check the seasoning before serving.
