Recipe Description
For added protein and calcium, sprinkle pizza with the marinated crumbled tofu. Serve piping hot, or at room temperature for packed lunches.

6 Ounce(oz)  extra firm tofu, crumbled
2 Tablespoon(T)  extra virgin olive oil
2 Teaspoon(t)  balsamic vinegar
1/2 Teaspoon(t)  rosemary, dried
12 Ounce(oz)  pizza dough
2 Teaspoon(t)  extra virgin olive oil
1/2 Teaspoon(t)  rosemary, dried
2 Cup(c)  large tomatoes, chopped
2 Clove(clv)  garlic, minced
1/2 Cup(c)  red onion, chopped
1/4 Cup(c)  fresh parsley, chopped
2 Tablespoon(T)  extra virgin olive oil
2 Teaspoon(t)  basil, dried
1/2 Teaspoon(t)  salt

Preparation

To prepare the marinated tofu: In a small bowl, combine tofu, oil, vinegar and rosemary. Let stand for about 10 minutes. Meanwhile, prepare the crust. Roll dough out on a floured surface to fit prepared pizza pan. Brush with oil and sprinkle with rosemary. Bake in preheated 400 degree F oven until pale brown, about 5 minutes. To prepare the topping: Combine tomatoes, garlic, onion, parsley, oil, basil and salt. Sprinkle partially baked crust evenly with topping and marinated tofu. Bake until golden brown on bottom, about 20 minutes. Remove from oven and sprinkle with cheese. Cut into 6 wedges and serve hot or at room temperature.
