Recipe Description
This is an excellect diabetic friendly recipe, that packs the flavor but not the sugar.  Try these pancakes with sugar free syrup or fruit preserves.

Ingredients

1/2 Teaspoon(t)  baking soda
1 Teaspoon(t)  low sodium baking powder
1 Teaspoon(t)  sugar
1 1/4 Cup(c)  buckwheat flour
1 Tablespoon(T)  canola oil
1/2 Cup(c)  low fat buttermilk
1   egg white

Preparation

Beat together the egg white, buttermilk and oil in a bowl.  Add the flour, sugar, baking powder and baking soda.  Stir until the ingredients are just blended.  Pour the batter onto a hot, lightly sprayed griddle.  Cook until bubbles form on the surface and the edges become dry.  Turn and cook until golden brown.
