Recipe Description
I use homemade sofrito, but you can buy it prepared in the supermarket. Look for it in the freezer case or on the shelves.

Ingredients

1 1/2 Cup(c)  bulgur, cooked and cooled
3/4 Cup(c)  tomatoes, chopped
3/4 Cup(c)  avocado, chopped
1/2 Cup(c)  cucumber, chopped
2 Tablespoon(T)  sofrito
1 Tablespoon(T)  extra virgin olive oil
1 Tablespoon(T)  fresh lime juice
1/4 Teaspoon(t)  salt, or to taste

Preparation

In a large bowl, stir together the bulgur, tomatoes, avocado and cucumber. In a small bowl, stir together the remaining ingredients. Pour the dressing over the salad and toss to combine.
