Buttermilk Angel Biscuits

Recipe Description
If you can't bake these biscuits immediately, cover and chill the dough for up to 24 hours. Roll, cut and bake the biscuits as directed.

5 Cup(c)  all purpose flour
1/4 Cup(c)  sugar
1 Tablespoon(T)  baking powder
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  salt
1 Cup(c)  solid vegetable shortening
1 Package(pk)  active dry yeast
2 Tablespoon(T)  warm water
2 Cup(c)  buttermilk


Heat oven to 400 degrees. In large bowl, stir together flour, sugar, baking powder, baking soda and salt. Using a pastry blender, cut in shortening until mixture resembles coarse crumbs. Make a well in center of flour mixture; set aside. In medium-size bowl, dissolve yeast in warm water. Stir in buttermilk. Add buttermilk mixture to well. Using a fork, stir just until moistened. Turn out the dough onto a lightly floured surface. Knead the dough by folding and gently pressing dough for 4 to 6 strokes or just until the dough holds together. Pat or lightly roll the dough to 3/4-inch thickness. Cut the dough with a floured 2 1/2-inch biscuit cutter. Place biscuits one inch apart on ungreased baking sheet. Bake at 400 degrees for 15 to 18 minutes or until light brown. Remove from baking sheet. Serve immediately.
