Caesar Salad With Apple Dressing And Currants

Leave out the watercress if it is difficult to find. In its place you might want to add a sharp flavored green, like radicchio or escarole.

1 Bunch(bn)  romaine lettuce, washed, dried and torn into pieces
1 Bunch(bn)  leaf lettuce, washed, dried and torn into pieces
1 Bunch(bn)  watercress, stems removed
1 Cup(c)  currants
1 Clove(clv)  garlic
3   medium granny smith apples, cored, peeled and quartered
2 Tablespoon(T)  apple cider vinegar
2 Tablespoon(T)  lemon juice
1/4 Cup(c)  reduced fat mayonnaise
1/4 Cup(c)  plain non fat yogurt
2 Tablespoon(T)  dijon mustard
1/2 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground
1/4 Cup(c)  parmesan cheese, grated and divided
2 Tablespoon(T)  extra virgin olive oil
2 Cup(c)  fat free croutons


Prepare the lettuces and watercress. Toss with the currants and chill. Mince the garlic in a food processor, then add the apples, vinegar and lemon juice. Puree. Pulse in the mayonnaise, yogurt, mustard, salt, pepper and half the Parmesan cheese. Process until smooth. With the machine running, pour in the olive oil. Toss the dressing with the salad. Top with the remaining Parmesan and the croutons.
