Recipe Description
Calas are one of those legendary dishes in Creole cookery that one often hears about but seldom finds. They are a wonderful change from pancakes and cereals for breakfast and make a good alternate to bread at a meal.

Ingredients

1 Cup(c)  rice
1/2 Cup(c)  sugar
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  nutmeg
1 1/2 Teaspoon(t)  baking powder
1 Tablespoon(T)  boiling water
3   eggs
1/3 Cup(c)  flour
2 Cup(c)  oil, enough to get a depth of 2 inches in the frying pan
1/4 Cup(c)  powdered sugar

Preparation

Bring 2 cups water to a boil with 1 teaspoon salt and 1 tablespoon butter. Add 1 cup rice, cover and simmer for 20 minutes, or until the rice is completely cooked and all of the liquid is absorbed. To make the dough: Blend the cooked rice together with the sugar, salt and nutmeg. Dissolve the baking powder in boiling water and blend it into the mixture. Now work in the eggs and the flour 1 cup at a time. Divide the mixture into 12 flat round cakes. Fry in 2 inches of oil heated to 350 degrees F until the calas are browned on both sides, about 5 minutes. Drain on paper. Dust the calas with powdered sugar and serve hot.
