This simple pecan and caramel cake is impressive at any serving occasion, since it's made as a bundt cake. Glazed or plain, it's sure to be a hit!

2 1/4 Cup(c)  all purpose flour
1/4 Cup(c)  brown sugar, packed
1/2 Cup(c)  shortening
1 Cup(c)  milk
3 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  vanilla
2   eggs
1/2 Cup(c)  pecans, chopped


Heat oven to 350 degrees F. Grease and flour 12 cup bundt cake pan. Beat all ingredients except pecans in large bowl on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl frequently. Stir in pecans. Pour batter into pan. Bake 35 to 40 minutes, or until tooth pick inserted in center comes out clean. Cool 20 minutes, then invert onto wire rack. Cool completely.
