1 Cup(c)  coconut milk
3 Cup(c)  vegetable broth
1/2 Cup(c)  pumpkin, cooked
1 Cup(c)  pineapple pieces
1/2 Cup(c)  black beans, cooked
1 Clove(clv)  garlic, minced
1 Cup(c)  spinach, chopped

Preparation

Preheat oven to 325°F. Rinse rice. Combine all ingredients in a covered casserole dish. Bake 1 hour.
