Ingredients

1/2 Cup(c)  boiling water
1/3 Cup(c)  uncooked couscous
1 Tablespoon(T)  canola or vegetable oil
1/2 Cup(c)  small red bell pepper, diced
1 Teaspoon(t)  thyme leaves, dried
1 Teaspoon(t)  curry powder
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  allspice, ground
1/2 Teaspoon(t)  cumin, ground
1/2 Teaspoon(t)  ginger, ground
1/4 Teaspoon(t)  pepper
1/4 Teaspoon(t)  paprika
1/4 Teaspoon(t)  cayenne red pepper, ground
1 Pound(lb)  ground turkey
4 Tablespoon(T)  reduced fat mayonnaise
4   large kaiser buns, split, toasted and buttered
4   lettuce leaves
1   mango, peeled and thinly sliced

Preparation

Spray grill rack with nonstick cooking spray.  Heat coals or gas grill for direct heat.  Mix water and couscous in small bowl.  Cover and let stand 15 to 20 minutes or until water is absorbed.  Heat oil in 8 inch nonstick skillet over medium heat.  Cook bell pepper, thyme, curry powder, salt, allspice, cumin, ginger, pepper, paprika and red pepper in oil 1 to 2 minutes, stirring constantly, until bell pepper is tender.  Let cool.  Mix turkey, bell pepper mixture and couscous.  Shape mixture into 4 patties, about 4 1/2 inches in diameter.  Grill patties uncovered about 10 minutes, turning once, until no longer pink in center.  To serve, spread 1 tablespoon mayonnaise on bottom of each bun.  Place lettuce leaf and burger on bottom half of each bun.  Top with 3 slices mango and top of bun.

Additional notes

Vriation:  Peach or tomato slices can be substituted for the mango.
