Recipe Description
This light and colorful soup is fun to serve in a cleaned out pumpkin. The unique tureen makes for a nice addition to the holiday table. Simply add the soup to the pumpkin, and heat in a warm oven for about 5 minutes.

1/4 Cup(c)  low sodium chicken broth
1 Pound(lb)  carrots, peeled and sliced
14 Ounce(oz)  low sodium peeled whole tomatoes
1   large onions, chopped
1 Clove(clv)  garlic, minced
1/2 Cup(c)  orange juice, unsweetened
2 Tablespoon(T)  parsley, chopped
2 Teaspoon(t)  salt free seasoning
1 Teaspoon(t)  ginger
1/2 Cup(c)  fat free milk
1/4 Cup(c)  low fat margarine
1 Pinch(pn)  pepper, to taste


Place the chicken broth, carrots, tomatoes, onions, garlic, orange juice, parsley, salt free seasoning, pepper and ginger in a large stockpot. Cover with water and cook until tender. Remove from the pot when tender and puree in a food processor. Return to the pot and add the fat free milk and margarine. Stir and simmer for approximately 10 more minutes.
