A easy way to make a "homemade" carrot cake.

18 1/4 Ounce(oz)  spice cake mix
3/4 Cup(c)  canola oil
2 Cup(c)  carrots, shredded
8 Ounce(oz)  instant butterscotch pudding and pie filling mix
4   large eggs
8 Ounce(oz)  pineapple, crushed
1 Cup(c)  sour cream
1 Cup(c)  water


Coat a 5 quart slow cooker with cooking spray. In a large mixing bowl,combine cake mix, carrots, pudding mix, eggs, undrained pineapple, sour cream, water and canola oil. Beat with a handheld electric mixer on medium speed for 2 minutes. Transfer to slow cooker. Cover and cook on LOW heat setting for 4 1/2 to 6 hours. Serve warm with cream (optional).
