Recipe Description
A delicious stir fry meal, our entire family enjoys. It can be served hot, chilled or at room temperature, making it a good choice for potlucks too. Cellophane noodles are available in the Asian section of most supermarkets. They are also called bean thread or glass noodles.

Ingredients

4 Ounce(oz)  cellophane noodles
2 Tablespoon(T)  peanut oil
8 Ounce(oz)  medium raw shrimp, peeled and deveined
3 Clove(clv)  garlic, minced
1/4 Teaspoon(t)  red pepper flakes
1/2 Cup(c)  pork or ham strips
2 Tablespoon(T)  soy sauce
1 Tablespoon(T)  fresh lemon juice
1 Tablespoon(T)  rice vinegar
1 Tablespoon(T)  dark sesame oil
1/3 Cup(c)  green onions, thinly sliced

Preparation

Place cellophane noodles in medium bowl. Cover with warm water. Soak 2 minutes to soften. Drain well, then cut into 2 inch pieces. Meanwhile, heat wok or large skillet over medium high heat. Add peanut oil. Heat until hot. Add shrimp, garlic and red pepper flakes. Stir fry for 2 minutes. Add pork, soy sauce, lemon juice, vinegar and sesame oil. Stir fry 1 minute. Add cellophane noodles and stir fry 1 more minute, or until heated through. Serve warm, chilled or at room temperature. Sprinkle with green onion before serving.
