TI1is is traditional jewish bread eaten on the Sabbath and all jewish holidays except for Passover.

1 Tablespoon(T)  poppy seeds or sesame seeds
1 Tablespoon(T)  low-sodium water
1   egg yolk
2 1/2 Teaspoon(t)  bread machine yeast
2 Tablespoon(T)  potato flour
3 Cup(c)  less 1 tablespoon unbleached bread flour
1 Tablespoon(T)  vital wheat gluten
1/4 Teaspoon(t)  ascorbic acid
1/2 Teaspoon(t)  onion powder
2 Tablespoon(T)  white sugar or splenda
3 Tablespoon(T)  extra-virgin olive oil
1 Tablespoon(T)  white wine vinegar
2   large eggs taken out of refrigerator 10 minutes before using
8 1/2 Ounce(oz)  warm low-sodium water, 100°f to 110°f


Place the bread ingredients into the bread machine and set for Dough.

Heat your oven for the rise either using your proof button or by bringing
it to 100°F or just under.

Prepare a baking sheet by spraying it with oil and dusting with flour. Just before the dough is ready, lightly beat the egg yolk with the water and set the egg wash aside.

When the dough is ready, roll it out on a lightly floured board. Break into 2 equal pieces. Form logs by rolling the dough with both hands. This dough will be very pliable so have fun. Braid these on the baking sheet.

(If you don't like the braid, pick up the whole thing and twist it until it's even from end to end.)

Baste with the egg wash. Sprinkle poppy seeds or sesame seeds over the top. Cover with lightly oiled waxed paper or very light cloth dusted with flour and let rise for about 1 hour in a warm place such as your proofing oven.

Preheat the oven to 375°F. Bake the challah for 30 to 40 minutes, or until golden brown.
