A mixture of raisins, rum and almonds add a fun touch to this flaky cheese bread. The light sugar icing adds a festive touch for the holidays.

Ingredients

1/3 Cup(c)  confectioners' sugar
3 Tablespoon(T)  butter, melted
1/2 Cup(c)  candied orange rind, finely chopped
6 Ounce(oz)  almonds, ground
6 Ounce(oz)  raisins
1/2 Pound(lb)  ricotta cheese
2 Tablespoon(T)  rum
2/3 Cup(c)  sugar
2/3 Cup(c)  butter, softened
2   eggs
4 Teaspoon(t)  baking powder
4 Cup(c)  all purpose flour, sifted

Preparation

Combine the flour with baking powder, eggs, butter, sugar, rum and cheese. Knead the dough. Mix the raisins with almonds and orange rind. Add to the dough. Form a narrow loaf. Bake on a buttered cookie sheet in a moderate 375 degree F oven for 1 hour. Spread the hot cheese bread with butter and sprinkle with confectioners' sugar through a sieve.
