Ingredients

1/3 Cup(c)  honey (plus 2 tablespoons)
4 Teaspoon(t)  white vinegar
24 Ounce(oz)  oil, for frying
1   egg, beaten
4   egg roll wrappers
1 Pinch(pn)  salt
1/2 Teaspoon(t)  fresh cilantro, chopped
1 Tablespoon(T)  red onion, finely chopped
2 Tablespoon(T)  chopped dry-packed sun-dried tomatoes
1   large avocado, pitted, peeled, and diced
1/4 Cup(c)  olive oil
1 Teaspoon(t)  ground cumin
1 Teaspoon(t)  pepper
1 Tablespoon(T)  sugar
2   green onions
2 Clove(clv)  cloves garlic
2/3 Cup(c)  fresh cilantro, chopped
1/2 Cup(c)  cashews, chopped
1 Pinch(pn)  ground turmeric
1/2 Teaspoon(t)  tamarind concentrate
1 Teaspoon(t)  balsamic vinegar

Preparation

To make the dipping sauce, combine the vinegars, honey, and tamarind in a microwave-safe bowl. Stir until the tamarind is dissolved.

Microwave for 1 minute.

Using a food processor, puree the tamarind mixture, turmeric, cashews, the 1/2 teaspoon of cilantro, garlic, green onions, sugar, pepper, and cumin.

Pour the mixture into a bowl and stir in the oil.

Cover and refrigerate until needed.

To make the egg rolls, stir together the avocado, sun-dried tomato, red onion, remaining cilantro, and salt.

Place some of the filling in the center of one of the egg roll wrappers.

Fold one corner up one quarter of the way over the filling. Brush the remaining corners and edges with the beaten egg, fold over the left and right sides, then fold the top corner over all and press to seal.

Repeat with the remaining wrappers.

Deep-fry the egg rolls in 375°F oil for 3 to 4 minutes, until browned.

Drain on paper towels.

Serve with the chilled dipping sauce.
