Recipe Description
Scalloped potatoes are a nice change from more traditional mashed potatoes usually served during the holidays.  This recipe also has the benefit of being lower in fat, thanks to the use of fat free yogurt and low fat margarine.

2 Tablespoon(T)  parmesan cheese
1/8 Teaspoon(t)  pepper
3 Tablespoon(T)  fat free plain yogurt
3 Tablespoon(T)  all purpose flour
1 Teaspoon(t)  paprika
1/4 Cup(c)  celery, diced
1/4 Cup(c)  onions, diced
2 Tablespoon(T)  low fat margarine
6   medium potatoes, sliced
10 1/2 Cup(c)  fat free milk


Scald the milk in a pan and allow to cool to lukewarm.  Place a layer of sliced potatoes in the bottom of a baking pan coated with cooking spray.  Sprinkle with half the onion, celery and paprika.  Preheat oven to 350° F.  To the milk, add the flour, yogurt and pepper.  Pour half on the first layer of potatoes and sprinkle with Parmesan cheese.  Repeat the layers of potatoes, celery and onion.  Sprinkle with paprika, and cover with the remaining yogurt sauce.  Sprinkle with Parmesan.  Dot the top of the potatoes with margarine.  Cover and bake for 30 minutes.  Uncover and bake for 50 more minutes, or until potatoes are tender.
