Recipe Description
Now this is a lovely and delicious side dish!  Whipped potatoes are blended with cottage cheese, creating a super creamy texture, then baked in the oven until golden brown.  Two more types of cheese add flavor, color and texture to the dish.

3 Pound(lb)  potatoes, cooked, peeled and whipped
1/2 Cup(c)  low sodium chicken broth
6 Ounce(oz)  fat free cottage cheese
1   green bell pepper, chopped
1/2 Cup(c)  low fat cheddar cheese, shredded
5 1/2 Tablespoon(T)  parmesan cheese, grated

Preparation

Preheat oven to 350° F.  Whip the cooked potatoes with the broth, cottage cheese, green pepper and cheddar cheese in a bowl.  Place in a baking dish and top with Parmesan cheese.  Bake for 30 minutes, until golden brown.
