Recipe Description
This easy chocolate cake recipe has the added benefit of cherries in the batter. They help keep the cake moist and add a subtle hint of flavor.

Ingredients

4 Tablespoon(T)  water
4   egg whites or 2 extra large eggs
1/3 Cup(c)  vegetable oil
1/4 Cup(c)  unsweetened grape juice concentrate
1/4 Cup(c)  unsweetened apple juice concentrate
1 Tablespoon(T)  soy powder
1 1/3 Cup(c)  all purpose flour, tapped lightly 4 to 5 times
1/4 Cup(c)  unsweetened cocoa powder, or unsweetened carob powder, firmly packed
1 1/4 Teaspoon(t)  baking soda
2 Teaspoon(t)  soy powder
2 Cup(c)  frozen, dark, sweet cherries, partially thawed

Preparation

Preheat oven to 325° F. Oil and flour a 9 by 9 by 2 inch baking pan. Puree partially thawed frozen cherries and water in a blender. Blend until mixture turns and folds. Place puree in a strainer over a small bowl and let drain for 10 minutes, stirring occasionally. Pour pulp remaining in strainer into a measuring cup and add enough of the juice to make 1/2 cup of pulp and juice. In a large bowl, combine 1/2 cup cherry pulp and juice, eggs, oil, juice concentrates and soy powder (or dry milk). Beat mixture for 30 seconds with a hand operated beater. Add 1 1/3 cups flour and cocoa and beat well. Stir in baking soda quickly, and then mix (28 to 30 beats). Immediately pour mixture into prepared baking pan. Bake 30 minutes, or until a cake tester inserted in center of cake comes out clean. Remove pan from oven and place on a wire rack until cake is completely cooled. To store, cover cooled cake with plastic wrap or in an airtight container, and store on counter top or freeze.
