The rice topping is very sweet. Consider serving this dish with a scoop or two of vanilla ice cream.

Ingredients

1/4 Teaspoon(t)  xanthan gum
1 Teaspoon(t)  vanilla extract
1/4 Cup(c)  brown sugar, packed
1/2 Teaspoon(t)  baking powder
1/2 Cup(c)  rice flour
1/2 Cup(c)  water
2 Tablespoon(T)  cornstarch
1/2 Cup(c)  sugar
14 Ounce(oz)  red tart pie cherries, pitted

Preparation

Preheat the oven to 375 degrees F. If using canned pie filling, divide among four individual ovenproof dishes. Set aside. If using canned cherries, combine the cherries, the liquid from the can, sugar, cornstarch and water in a microwave safe bowl. Microwave on high for 5 to 7 minutes, stirring occasionally, until nicely thickened. Once thickened, divide among four individual ovenproof dishes. Set aside. Combine the topping ingredients in a bowl and mix until crumbly. Sprinkle over the filling. Bake for 25 minutes, until the topping is golden brown and the filling is bubbly.
