Cherry Oatmeal Chocolate Chip Cookies

These cookies have a little bit of everything in them, except dairy products. If you've never tried a dairy free dessert, these cookies are a great place to begin.

1 Cup(c)  all purpose flour
1 Cup(c)  coconut flour
1 Cup(c)  quick cooking oats
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  baking powder
1 Cup(c)  non dairy butter, softened
3/4 Cup(c)  granulated sugar
3/4 Cup(c)  brown sugar, firmly packed
1/4 Cup(c)  agave nectar
3/4 Cup(c)  vanilla soy yogurt
1 Teaspoon(t)  pure vanilla extract
1/2 Teaspoon(t)  salt
1 Cup(c)  dried cherries
1 Cup(c)  non dairy semisweet chocolate chips
1/2 Cup(c)  sweetened flaked coconut


Preheat the oven to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats. In a large bowl, mix together the flours, oats, baking soda and baking powder. In a separate bowl, mix together the butter, sugars, agave, yogurt, vanilla and salt. Add the wet ingredients to the dry, being careful not to over mix. Fold in the cherries, chocolate chips and coconut. Form into balls using about 1/3 cup dough per ball, flatten slightly, and place on the prepared baking sheets about 2 inches apart. Bake for 12 to 15 minutes, or until lightly browned. Let cool completely before removing from the baking sheet.
