Recipe Description
This is an excellent salad for a luncheon because it can be made the day before, yet still look fresh and extravagant plated on a bed of greens the day of the party.

Ingredients

1/2 Cup(c)  red wine vinaigrette
1 Tablespoon(T)  tarragon, dried
1 Cup(c)  cooked long grain brown rice
1/4 Cup(c)  red onion, thinly sliced
1   rib celery, thinly sliced
1/2   red bell pepper, julienned
4 Ounce(oz)  artichoke hearts, packed in water
1/2 Pound(lb)  skinless, boneless chicken breasts, cooked and cubed

Preparation

Gently stir together the chicken, artichoke hearts, bell pepper, celery, onions, rice and tarragon. Pour on the dressing. Toss to coat. Refrigerate for several hours to allow the rice and chicken to absorb some of the dressing.
