Serves Tool

Serves To:USMetric
8   chinese steamed bun dough
2 Tablespoon(T)  fresh lemon juice
1 Tablespoon(T)  unsalted butter
1 Tablespoon(T)  olive oil
4   boneless, skinless chicken half breasts, cut into bite sized pieces
1/2 Cup(c)  shallots, chopped
1 Dash(ds)  white pepper, ground
1/16 Teaspoon(t)  cayenne pepper
3 Tablespoon(T)  all purpose flour
1/4 Cup(c)  sour cream
2 Cup(c)  chicken broth

Melt the butter with the oil in a deep stockpot. When the butter and oil are bubbling, add the shallots, sprinkle with the white and cayenne pepper, and saute for 4 to 5 minutes. Add the flour and stir thoroughly. Remove the pan from the heat and add the chicken broth all at once. Stir until smooth. Return the pot to the heat and continue cooking until the mixture thickens. Add the sour cream and lemon juice. Stir until well blended. Add the chicken and simmer until cooked through. Shape the bun dough into dumplings about the size of golf balls, and drop on top. Reduce the heat to low, cover, and cook for 20 minutes. Do not remove lid during this time.
