1/2 Cup(c)  green onions, finely chopped
6 Slice(sli)  country bread
1 Pound(lb)  boneless, skinless chicken breasts, cut into 1-inch strips
2 Clove(clv)  garlic, cut in half
3 Tablespoon(T)  extra virgin olive oil
1/2 Cup(c)  green bell pepper, thinly sliced
2/3 Cup(c)  pineapple-ginger chutney

Preparation

Combine chicken, green onions, bell pepper and chutney in a bowl and mix well. In a skillet, heat 1 tbs. of the olive oil over medium heat and quickly stir-fry chicken and vegetables until chicken is tender; about 5 minutes. Toast bread, rub one side of each bread slice with cut side of a garlic clove and drizzle with remaining olive oil. Top bread with chicken mixture.
